Based in the Oakwood Premier Phnom Penh, you have such an important responsibility – but like all senior positions in Oakwood you are not alone! We are all here to assist by supporting you with great Food & Beverage practices within our teams and our professional spheres of influence. So as you implement Food & Beverage policies and programs, we will ensure they are rolled out and as for managing all aspects of Food & Beverage related matters, has overall responsibility for providing leadership and management for the Food & Beverage Division and be accountable for its asset and performance – i.e., F&B revenue & profitability, guest satisfaction, brand consistency and employee engagement. This position is also responsible for establishing business plans which results in the long term continued growth and profitability of the division, we will be guided by you on the best practices. Sounds a lot but we know you are capable due to your resourcefulness, excellent communication skills and leadership ability. It’s a dynamic role that also offers an opportunity to have some fun along the way.
A day in the life of an Oakwood Food & Beverage Manager We don’t expect every day to be filled with all that is listed here and we are sure there will be additional surprises along the way, but here are some of the key responsibilities we need you to own and master, bearing in mind that our key priorities are to become the operator of choice for owners, the preferred place to stay for our guests and the company all hospitality professional desire to work for.
The Food & Beverage Manager will: • Direct all operational activities towards supporting the Property’s goals - Gross Operating Profit, Guest Satisfaction, Brand Consistency and Employee Engagement. • Set periodical business plan, budget, and forecast and performance reports. • Coordinate the development, interpretation and implementation of Oakwood / Property’s policies, operating procedures and training programs, manuals, directives, menus, work schedules, rules and regulations for the food and beverage staff. • Analyze daily reports to check irregularities. • Implement Oakwoods’ service culture and operating standards. • Conduct random checks to ensure that all standards are being followed consistently in the F&B Division. • Maintain up-to-date records on food and beverage employees’ attendance, appearance, work and vacation schedules, labor costs, payroll, absenteeism, turnover and disciplinary action. • Approve the employment and termination of food and beverage staff and employees and is responsible for on-the-job training on a regular basis. • Coordinate the selection, purchasing, storage, inventorying, maintenance and usage of all related food and beverage supplies and equipment. • Ensure the implementation of HACCP policies and procedures throughout the F&B Division. • Handle all guest complaints in the food and beverage division • Maintain current prices and approved purveyors listed based on quality, service and cost of all related food and beverage items for requisitioning purposes, store inventories, cost control procedures and forecasts. • Work closely with local, state and governmental organizations in maintaining the highest standards of hygiene, sanitation and cleanliness in food and beverage areas. • Develop new and special promotions that will improve guest satisfaction under the guidelines of the Raffles’ standards operating procedures. • Develop and maintain effective communications between all operating departments. • Conduct daily F&B Meeting to discuss VIP guests in house & arrival, F&B revenue updates, operational challenges and ways to improve. • Maintains a favorable working relationship with all divisions to foster and promote a cooperative and harmonious working climate which will be conducive to maximum employee morale, productivity and efficiency/effectiveness • Ensure that all F&B outlets update Guest Preference database on a regular basis • Coordinate promotional plan with Marketing Committee as well as menu cycles with the Executive Chef • Develop high performing F&B management team to take on the next role. Growing managers within Oakwood • Respond properly in any hotel emergency or safety situation. • Ensures property policies are administered fairly and consistently. • Give really good advice to the General Manager on all Food & Beverage matters • Encourages a good standard of Associate’s conduct and behavior and coordinates disciplinary procedure as and when necessary. • Promote Associates communication activities and channels, to encourage and enable feedback from Associates. • Maintain a positive relationship with Associates’ representatives and ensure any Associates’ grievances are monitored and resolved. • Any other adhoc duties as assigned. What it takes to be a really great Food & Beverage Manager • A good 6 - 10 years of experience in a Food & Beverage Managerial position • A Bachelor's degree from a reputable hotel school or Professional Diploma in Hospitality is nice but not everything. Experience passion and a great understanding of the role are equally important. • Exceptional interpersonal skills including communicating, listening and coaching will ensure you are successful in your role and will develop trust, the key ingredient for success • Ability to develop strong relations and work with associates at all levels is quite essential • Solid business acumen, management reporting and problem-solving skills • Technologically savvy makes life generally easier. • Ability to remain calm and courteous in demanding situations.
The Small Print: Whilst the above list is quite extensive, from time to time there may be new projects, shifts in strategy, changes in industry trends that require us to rethink our responsibilities. The role can be an evolving one and you will need to be flexible with change if not the instigator of it. At Oakwood, our General Managers have the ultimate responsibility for the performance of their properties and their teams tasked with property based goals. This includes the Food & Beverage team. However, our culture is one of collaboration and as such, as part of the team, we are to provide support to the property based on our expertise. Your role may sometimes deals with very confidential matters and discretion is a key trait I insist on. You may be confronted with many sensitive issues and if your decision has an impact on the brand, then I need to be correctly advised in advance.
